I am presenting you a tasty and vegan version of our traditional meatloaf. And the bonus part is that all the recipe ingredients are extremely nutritious. Meatloaf without The Meat

Ingredients
  

  • 2 cups of chickpeas
  • 1 cup of breadcrumbs
  • 4 tablespoons flaxseeds
  • 2 tablespoons of extra-virgin olive oil
  • 2 onions sliced
  • 2 tablespoons ginger-garlic paste
  • 2 teaspoons tomato paste
  • 2 teaspoons Dijon mustard
  • 1 tablespoon soy sauce
  • 2 tablespoons tomato sauce
  • 1 tablespoon chili sauce
  • Salt to taste
  • 1 teaspoon pepper
  • 1 teaspoon paprika
  • 2 celery stalks chopped
  • ½ cup mushrooms chopped
  • ¼ cup red bell pepper chopped
  • ¼ cup green bell pepper chopped

Instructions
 

  • Preheat the oven to 180C. Take a loaf pan and grease lightly with cooking oil. Place a baking paper in the loaf pan and line perfectly.
  • Drain and wash the chickpeas. Keep aside.
  • Add olive oil in a frying pan. Heat the oil over medium heat and add sliced onion. Fry for 2 minutes. Then add ginger-garlic paste, celery, red bell pepper, green bell pepper, and mushroom. Add salt and pepper. Fry for 3 to 5 minutes. Keep aside to cool down.
  • Now Add chickpeas, flaxseeds, and breadcrumbs to the food processor. Run the food processor 3 to 4 times. Don’t turn the mixture into powder form. Try to keep them a little bit coarse.
  • Now add the fried vegetables, tomato paste, Dijon mustard, soy sauce, salt, and paprika. Mix nicely.
  • Add the mixture to the lined loaf pan. Bake for 30 minutes.
  • Now take a small bowl. Add tomato sauce and sweet chili sauce. Mix nicely.
  • Spread the sauce mix evenly over the baked meatloaf. Bake for another 10 minutes.
  • Enjoy.
