Episode 3: how to make an amazing seasonal comfort dish, the Peruvian Locro

Ingredients welcome today we are going to be cooking locro is a dish that is going to honor the fall season here in the United States for this dish that I’m going to make for you I use butternut squash I use regular pumpkin and I use honey pumpkin or sub-bio like this one we gotCookingour medium-sized pot heating on medium here and we added some avocado oil I love using avocado oil because its healthy and it’s the most natural kind of oils that you can find that are good for you

so we got the oil already heated and we’re going to uh Igot I tie some Spanish onions we’re going to add it and we’re going to let it sweat it’s stifling right now you can see the puppies really and we’re gonna let it cook probably for about three minutes and then we’re going to add garlic just wanted to make sure that is straight and it’s cook and the juices are coming now.

Before I add the garlic because I just don’t want to burn both together so at this point I am going to light the garlic the garlic is already chopped what I’m making right is called a veneer so in other countries it’s also called sofrito this is the way we make in Peru the other resource normally we make it with onions and garlic sometimes we add tomatoes to it and sometimes we’re not but normally is a lot of onions and garlic that’s how I learn for my mom so we are going to add a little bit of salt a little bit of pepper and cumin.

I love human food these flavors are just so delicious so while this getting cooked got some humor in your face that it going to give the locker oh that yellow color to it so we’re going to up thereAtiamuri your face to the dish this is about two tablespoons of that so we’re going to mix all that together the locker is a vegetarian dish I’m going to make up some dairy today so it’s not really began but without the air, you can make a vegan they theory that I going to add it’s a little bit of heavy cream at the end and some cheese but you don’t have to add that and it’s just so delicious you know the flavor of their theory you mix with the pumpkin it’s just amazing you will get that student’s aware flavor is so good so this is almost ready we are going to add a where pumpkin orSofia so now we are going to cover the pot and let this to cook for about 20 minutes and voila almost wala as you can see the pump is almost cooked as well as the potatoes.

At this point we’re going to add Igot some veal lima beans it will give it like not just all the yellow color but some green in there and I got some Peruvian corn oh my god it smells so good so so good and we’re going to a waka die which is a black band it’s a black man that comes from the Andes, unfortunately, we have to get here in the United States frozen I cannot find it fresh even though I think there are places or people that have it in their garden fresh but this gifting is like it’s like it like a regular mint but it’s like it like a smoky it’s like very very strong I would say so here we got it going to a jazz some and add some more salt to it you also have my pink soul from the Andes from Mara’s and we’re going to steer oh my God looks so good so good.
